  • Wet Ingredients

    • ½ cup of orange juice
    • 1 tablespoon of vegetable oil
    • 1 clove of garlic (minced)
    • 1 cup of shredded Colby Jack cheese
    • 1 cup of shredded Mozzarella cheese
    • 1 lb of turkey (ground)
    • ½ of diced yellow onions
    • 2 chopped green onions

  • Dry Ingredients

    • 1 tablespoon of chili powder
    • 1 teaspoon of garlic powder
    • 1 tablespoon of salt
    • ½ teaspoon of cumin
    • 1 tablespoon of black pepper
    • 1 bag of baked tortilla chips

    • Guacamole
    • Salsa
    • Sour cream
    • Greek yogurt (optional)

  • Cookware and Bakeware

    • Large iron skillet
    • Baking/pizza pan (heatproof)

Preparation Instructions

Start by preheating your oven at 450°F for baking all the ingredients together. While the oven is being heated, place an iron skillet over high heat and add vegetable oil to it. Once the skillet is sufficiently hot, add all the diced yellow onions and cook until they’re slightly browned. Make sure you don’t over-cook them.

Add the ground turkey meat to the skillet and cook the mixture together until the onions and the turkey are all light brown. Sprinkle the garlic, garlic powder, chili powder, salt, cumin, and pepper into the mixture. Stir everything in the skillet thoroughly until all the ingredients are fully combined.

 

Add all of the orange juice into the skillet, making sure to spread the liquid evenly over all of the meat. Let the mixture cook for about five minutes until the orange juice disappears entirely and the meat is cooked. Set this aside to cool a little bit.

 

Place the tortilla chips in a heat-proof baking pan or pizza tray. Spoon in the turkey ground mixture over the chips and spread evenly to cover the entire pan surface. Sprinkle the mozzarella and Cobly Jack cheese over the mixture before adding in the sliced green onions.

 

Place the tray inside the preheated oven and bake until the cheese melts. This should take around 5 to 8 minutes. Don’t overcook the meat as it will become tough and difficult to eat.

 

Serve when it is fresh out of the oven with guacamole, salsa, sour cream or Greek yogurt. This dish won’t taste good cold so it is important to serve as soon as it is made.

 

You can substitute the turkey with your other favorite meat options like ground beef, rotisserie chicken, etc. You can also experiment with different kinds of tortilla chips.
